A box of Palets de Fourvière and Amandes de Bellecour, two of our classic, exclusive specialities.

Palets de Fourvière are creamy chocolatey pralines of Piedmont hazelnuts, wrapped in a fine meringue. Amandes de Bellecour are confectioneries comprising a thin nougatine shell, filled with marzipan or praline, wrapped in a fine layer of meringue.

A Word from our Chocolate Master

These specialities, hand-made in our workshop, combine the finest ingredients and the artisanal skills of chocolatiers, under the direction of Maison Palomas’ Master Chocolatier, Dominique Clerc. The numerous steps involved in making Palets de Fourvière and Amandes de Bellecour cannot be done by a machine and require techniques specific to Maison Palomas that our artisans have mastered over many years of apprenticeship in our workshop.

Our Advice

Palets de Fourvière and Amandes de Bellecour can be enjoyed any time of the day, at room temperature (18°C to 27°C), paired with tea, coffee or a glass of champagne.

Ingredients

Palets de Fourvière: Praline: Piedmont hazelnuts, sugar, cacao butter, cacao paste, AOC Bresse butter. Meringue: Sugar, egg whites, coffee extract, rum. Hazelnuts, milk, eggs, possible traces of flour, nuts. Amandes de Bellecour: Nougatine: Sugar, almonds, brown sugar, glucose syrup. Pistachio marzipan: Almonds, sugar, Sicilian (Bronte) pistachios, glucose syrup, sorbitol, inverted sugar, kirsch. Orange marzipan: Lauranne almonds, crystallised oranges (Sicilian oranges, sugar, glucose syrup), sugar, glucose syrup, sorbitol, inverted sugar, Grand Marnier. Almond praline: Almonds, sugar, cacao butter.

Allergens

Almonds, pistachios, possible traces of flour and milk.

Conservation

Three weeks from purchase, in a dry place away from smells, at a temperature below 20°C.
