Soft, Candied Marzipan, Filled With Crystallised Fruit.
As soon as you bite into one of these colourful sweets, the fruity perfumes explode in the mouth. A fine coating of crunchy sugar covers the soft, home-made marzipan, filled with tangy crystallised fruit. Dentelles are like little marzipan raviolis enclosing delicious fruits crystallised by us, starting with a purée of fresh fruit. They are then covered in a fine coating of crystallised sugar. A delight for young and old alike. This box contains an assortment of Dentelles: Pistachio marzipan and crystallised apricot, orange marzipan and crystallised citrus fruit, lemon marzipan and crystallised strawberry, marzipan and crystallised raspberry, marzipan and crystallised blackcurrant. Colourful and fruity, Dentelles de Lyon are treats that delight those with a sweet tooth of all ages.

A Word from our Chocolate Master
Our marzipan-based confectioneries are usually crystallised. By "crystallised" we mean the confectionery is immersed in a supersaturated sugar syrup (granulated sugar dissolved in water) for about 12 hours. The excess sugar in the syrup settles on the confectionery in the form of little crystals. This delicate sugar crust keeps the marzipan doughy and provides a slight contrast in texture when the confectionery is eaten. The marzipan used for our Dentelles de Lyon is made using almonds grown in Drôme Provençale. We use Lauranne or Ferragnes varieties. Mr Villeneuve's farm supplies us with all our almonds which we then use in our workshop. The pistachios used in our marzipan are grown in Sicily, in the village of Bronte. These are the most flavourful pistachios around and are much sought after.
Pistachio marzipan: Almonds, sugar, Sicilian (Bronte) pistachios, glucose syrup, sorbitol, inverted sugar, kirsch. Orange marzipan: Lauranne almonds, crystallised oranges (Sicilian oranges, sugar, glucose syrup), sugar, glucose syrup, sorbitol, inverted sugar, Grand Marnier. Lemon marzipan: Lauranne almonds, crystallised lemons (Sicilian oranges, sugar, glucose syrup), sugar, glucose syrup, sorbitol, inverted sugar, Kéva (lemon alcohol). Morello cherry marzipan: Lauranne almonds, crystallised Morello cherries (Morello cherries, sugar, glucose syrup), sugar, glucose syrup, sorbitol, inverted sugar, kirsch. Apricot marzipan: Lauranne almonds, crystallised apricots (apricots, sugar, glucose syrup), sugar, glucose syrup, sorbitol, inverted sugar, apricot eau-de-vie. Crystallised fruit: fruit purées, sugar, isomalt, glucose syrup, fruit pectin, citric acid.
